Kitchen twine or toothpicks for securing the beef roll

Instructions:

1. Marinate the Beef: - In a large mixing bowl, combine the soy sauce, calamansi juice (or lemon juice), Worcestershire sauce, ground black pepper, garlic powder, onion powder, paprika, and salt to create the marinade. - Add the thinly sliced beef to the marinade, making sure each piece is coated. Cover the bowl and let the beef marinate for at least 1 to 2 hours, or overnight for maximum flavor.

2. Prepare the Filling: - In a separate pan, heat the cooking oil over medium heat. - Sauté the chopped onions and minced garlic until they become fragrant and translucent. - Add the ground pork and chorizo sausage, and cook until they are browned and fully cooked through. - Stir in the sliced carrots, pickles, sweet pickle relish, diced ham, raisins, and grated cheese. Cook the mixture until the carrots are tender and all the ingredients are well combined. - Season the filling with salt and ground black pepper to taste. Set the filling aside to cool.

3. Assemble the Beef Morcon: - Lay one marinated beef slice flat on a clean surface. Place a portion of the filling on one end of the beef slice. - Add a quartered hard-boiled egg on top of the filling. - Roll the beef slice tightly, enclosing the filling inside. Secure the roll using kitchen twine or toothpicks to hold its shape. Repeat the process with the remaining beef slices and filling.

4. Sear the Beef Rolls: - In a large skillet or pan, heat some cooking oil over medium-high heat. - Sear the Beef Morcon rolls on all sides until they are evenly browned. This step adds additional flavor and seals in the juices.

5. Prepare the Sauce: - In a separate saucepan, combine the beef broth, tomato sauce, soy sauce, liver spread (or liver pâté), brown sugar, and bay leaf. - Bring the sauce to a simmer and let it cook for about 5 minutes. Season the sauce with salt and ground black pepper to taste.

6. Braise the Beef Morcon: - Transfer the seared Beef Morcon rolls to the saucepan with the simmering sauce. - Allow the Beef Morcon to braise in the sauce over low heat for about 1 to 2 hours or until the beef becomes tender and the flavors meld together.

7. Serve and Enjoy: - Once the Beef Morcon is fully cooked and tender, transfer it to a serving platter. - Remove the kitchen twine or toothpicks before slicing the beef rolls into even portions. - Serve the Beef Morcon with the rich and savory sauce, and enjoy this delightful Filipino dish with steamed rice or mashed potatoes.
