- 4 cups young coconut meat (buko), grated or thinly sliced - 1 cup coconut water (from the buko) - 1 cup coconut milk - 1 cup evaporated milk - 3/4 cup granulated sugar (adjust to taste) - 1/2 cup cornstarch - 1 teaspoon vanilla extract - 1/4 teaspoon salt

Optional:

- 1/4 cup sweetened condensed milk for added sweetness (adjust to taste)

Instructions:

1. Prepare the Pie Crust:

- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well. - Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. - Gradually add the ice water and mix until the dough comes together. Be careful not to overwork the dough. If needed, add more ice water, one tablespoon at a time, until the dough holds its shape when pressed together. - Divide the dough into two equal portions, shape each into a ball, and flatten them into discs. Wrap each disc in plastic wrap and refrigerate for at least 30 minutes to allow the dough to rest and become easier to roll out later.

2. Prepare the Buko Pie Filling:

- In a saucepan, combine the grated young coconut meat (buko), coconut water, coconut milk, and evaporated milk. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer.

- In a separate bowl, mix the cornstarch with a small amount of water to create a slurry. Gradually pour the cornstarch slurry into the simmering coconut mixture while stirring continuously.

- Add the granulated sugar and salt to the mixture. Continue stirring until the filling thickens and reaches a pudding-like consistency.

- If desired, add sweetened condensed milk to the filling for added sweetness. Adjust the amount according to your taste preference.
