CHICKEN / PORK AFRITADA
SERVES 4-6 PERSONS
Estimated cooking time: 50 minutes
~INGREDIENTS
1 kilo chicken/pork, clip into pieces
1/4 kilo potatoe marbles, (no need to peel) wash and cut into halves
2 big carrots, cut into small cubes
1 green or red bell pepper, sliced into strips
1 small can Green peas, drain
2 cups pork or chicken stock (broth)
1 cup tomato sauce
2 tablespoons of patis (fish sauce)
3 tablespoons of cooking oil
~METHODS
1.In a cooking pot or wok, heat oil.
2.Fry potatoes and carrots then set aside .
3.Fry chicken/pork and slightly brown.
4.Pour the tomato sauce and stock. Bring to a boil and let to simmer for 20 minutes or until the chicken is almost cooked.
5.Add potatoes and carrots continue to chef for 8 minutes or until the potatoes are cooked.
6.Add bell peppers and Green peas, simmer for an additional minute or two.
7.Salt or fish sauce and pepper to taste
8.Serve this dish hot with steamed rice.
