Ingredients
1 cup Ground pork
1/2 cup Carrots , finely chopped
1/4 cup Onions , finely chopped
2 Tbsps Garlic , finely chopped
2 Tbsps Ginger , finely chopped
4 Tbsps Bread crumbs
4 Tbsps Oyster sauce
1 Egg
salt and pepper to taste
Directions
1. In a bowl, combine ground pork, carrots, onion , garlic, ginger, breadcrumbs and oyster sauce. Mix thoroughly.
2. Stuff the ground pork mixture on the backside of the prawn. Patting to form a small mound. Arrange on a tray and cover with plastic wrap. Chill in the refrigerator for 20-30 minutes. This will make it easier to handle when breading.
3. Meanwhile, beat eggs in a bowl. Spread flour and then bread crumbs in two separate plates. Roll the prawn lightly in flour. Dip in egg, then roll in bread crumbs.
4. In a frying pan, heat about 1/2 inch of oil. Fry stuffed shrimps, stuffing side down first. Invert to cook other side. Drain on paper towels. Serve with bottled sweet chili sauce.
